DG BOSS: Baker (FN) (Open)
- Able to bake a variety of cakes such as pound, foam (angel) frozen, soft batters, coffee cake, cornbread, hush puppies, dumplings, muffins, fritters, breads, rolls, pizza pies, cookies, doughnuts, breakfast pastries, biscuits, and other products to support daily menus using the Armed Forces Recipe Service (NAVSUP P-7).
- Able to understand the functions of ingredients, then use the ingredients properly to achieve desired results (manner of mixing and amount used).
- Thorough knowledge of dough conditioners such as yeast that contain three types of functional ingredients such as ammonium salts – nitrogen growth, calcium salts – hardness in dough water and to firm gluten, and oxidizing agent to give a firmer, less sticky dough.
- Able to calculate formulas for water temperature to control dough consistency, and formulas for bread and yeast-raised products and other true percentage calculations according with Armed Forces Recipe Service (NAVSUP P-7).
- Able to use, understand and interpret bakery production sheets for items to be produced, proper portion size and yield.
- Complete food preparation sheets for amounts requested, issued, received and returned items.
- Able to use and operate the mixing machines both floor and bench models type, deep fat fryers, bread slicer, grill, convection and rotary ovens, steam jacketed kettles, and hand operated machines such as dough dividers in a safe manner.
- Scale all ingredients to proper weights and portion sizes.
- Practices clean as-you-go method and cleanliness functions.
- Provides all other duties as may be required.
Basic Qualifications
- Must speak, read, and understand English language.
- Must pass overseas medical screening and be in good health.

- 4-hour Food Safety Course
- Food Sanitation Training Certificate
EDUCATION:
- High school graduate or trades school graduate.
EXPERIENCE:
- A minimum of 2 years working for the U.S. military installations or with American owned companies as a Baker. A thorough knowledge in the preparation of all types of bread and pastry items. A thorough knowledge in cake decorating techniques. A thorough knowledge in breakdowns or extensions of baking formulas.
